Salads

I made this loaded potato salad for the first time on Thanksgiving; something different to go with our spare ribs. It's my own recipe just the usual ingredients for a loaded baked potato. I also made a spinach salad that I forgot to photograph, but was pretty tasty for our Thanksgiving feast. The recipes follow:

Loaded Potato Salad

Ingredients

6 red potatoes
1/2 cup mayo
3/4 sour cream
1/2 stalk celery, chopped
1/2 cheddar cheese, shredded
5-6 stalks of green onion, sliced
1-2 strips of bacon, crisp and chopped
Salt and pepper to taste

Preparation

In salted water boil the potatoes until fork tender. Poke a few holes in them before cooking so they absorb the salt. (I usually do this the night before, allow them to cool, and refrigerate.)

Chop the celery, green onion, and potatoes, add them to a bowl along with the cheese, mayo and sour cream; Salt and pepper to taste and stir to combine.

Sprinkle with bacon and serve.

Simple Spinach Salad

Combine fresh spinach, dried cranberries, and sunflower seeds or slivered almonds with your favorite vinaigrette. That's it! Enjoy!

Day Nineteen: Chorizo Stew

I absolutely love chorizo; Mexican, Spanish, and Argentinian, you name it I want it. Ran across this gem of a recipe on Epicurious. White beans and chorizo seems like a great combination. It calls for Mexican chorizo, but I may use Spanish.

Ingredients

2 tablespoons olive oil, divided, plus more for drizzling
1 pound fresh Mexican chorizo
1 large onion, thinly sliced
4 garlic cloves, finely chopped
1 sprig thyme
2 15-ounce cans cannellini (white kidney) beans, rinsed
2 cups low-sodium chicken broth
Kosher salt, freshly ground pepper
5 ounces baby spinach (about 10 cups)
Smoked paprika (optional)

Preparation

Heat 1 tablespoon oil in a large skillet over medium heat. Add sausage and cook, turning occasionally, until browned and cooked through, 15-20 minutes. Transfer sausage to a plate. Reduce heat to medium. Heat remaining 1 tablespoon oil in same skillet. Add onion, garlic, and thyme sprig. Cook, stirring occasionally, until onion is softened, 5-8 minutes. Add beans and broth and cook, crushing a few beans with the back of a spoon to thicken sauce, until slightly thickened, 8-10 minutes. Season with salt and pepper. Add spinach by handfuls and cook just until wilted, about 2 minutes. Slice chorizo and fold into stew; add water to thin, if desired. Divide stew among bowls; drizzle with oil and sprinkle with paprika, if desired.

Quiche

As a kid my mom made quiche but I never ate it. I can't remember where I tried it but when I did I loved it. I also decided that I preferred vegetable quiche. The other day I went to the store and a large bag of spinach was on sale so I found a general recipe on Allrecipes and adapted it for what I wanted. Instead of butter I cooked two strips of bacon to saute the onions and garlic in, but I didn't actually use the bacon in the quiche.

Original recipe makes 6 servings

 2 tablespoons butter
 1 onion, minced
 1 teaspoon minced garlic
 1 cup chopped fresh spinach
1 (9 inch) unbaked pie crust
1 1/2 cups shredded mozzarella cheese
 4 eggs, well beaten
 3/4 cup milk
 1 teaspoon salt
 1/2 teaspoon black pepper
 1 tablespoon butter, melted

Preheat oven to 350 degrees F (175 degrees C).

Over medium-low heat melt butter in a large saucepan or crisp two strips of bacon and remove.

Add onions and garlic and saute until translucent not brown. Let cool.

Stir saute mixture into spinach and sprinkle with cheese. Spoon filling into crust

Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.

Bake in preheated oven for 30 minutes, or until center has set.
